Easy Roasted Broccoli

Simple, unassuming, and somehow impossible to stop eating straight off the pan. A handful of ingredients — broccoli, olive oil, sliced garlic, salt, and pepper — go into a hot oven and come out transformed: crispy-edged, tender-stemmed, and deeply savory in a way that steamed broccoli could never dream of being. Ready in about 25 minutes, it’s the side dish that goes with absolutely everything and quietly becomes everyone’s favorite part of the meal.

Ingredients:

  • 1 bunch broccoli (about 1 1/2 pounds), cut into florets, stems peeled and sliced or diced
  • 2 tablespoons extra-virgin olive oil
  • 3 cloves garlic, sliced

Instructions:

  1. Preheat oven to 450 degrees F
  2. Toss the broccoli florets with the olive oil, garlic, salt, and pepper on a baking sheet.
  3. Spread them out and then roast, without stirring, until the edges are crispy and the stems are crisp tender, about 20 minutes. Serve warm.
