Easy Protein Crunch Bars

Eating protein-rich foods before and after a workout is essential for building muscle and improving endurance. Perhaps you already know this but don't have time to cook a full-course meal. Lucky for you, getting the protein you need to fuel your body is easier (and tastier) than you might think! Protein bars are super easy to make with just a few protein-rich ingredients, like peanut butter and quinoa. Get a taste of this delicious protein crunch bar recipe from Juli (@paleomg)!

Ingredients:

  • 1 1/2 cups peanut butter (or other nut or seed butter)
  • 1/3 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 scoop peanut butter protein powder
  • 1/8 teaspoon salt
  • 2 cups puffed quinoa (or millet, rice, etc.)
  • 3/4 cups chocolate granola butter

Instructions:

  • Grease an 8×8 baking dish.
  • In a large bowl, whisk together peanut butter, maple syrup, and vanilla. Then mix in protein powder and salt.
  • Fold in puffed quinoa until combined.
  • Pour into baking dish and press down evenly throughout.
  • Pour chocolate granola butter on top and spread evenly on top to the edges of the baking dish.
  • Place in the fridge for at least an hour before cutting into 16 bars. Store in fridge.
